My daughter who is on summer break, had the coolest idea to create a fruit drink and choose to make what I call here, a Passion Fruit Mocktail.  Last year, I noticed that she picked up my love for design and photography.  Like a lot of girls, she is finding her voice and own style and creating things that makes her feel proud is now coming to the forefront.  I realize that once she finds the energy, she doesn’t waste time and gets right to what is in her imagination.

We took a trip to Hobby Lobby earlier that day and she saw the cutest drinking glass with a gold rim. I could only think that this was something I would want for myself. It was on sale for less than $5.00.  She decided to purchase it with her own money and felt proud that she could do so. 

 

 

She used our high-speed blender and fruits we purchased earlier to create this easy Passion Fruit Mocktail.  I didn’t hesitate to take a quick photoshoot of this adorable cup filled with Passion fruit with pineapple to garnish it. PASSION FRUIT MOCKTAIL RECIPE

 

YIELDS: 2 servings

 

INGREDIENTS

 

1 cup cold sparkling water

4 passion fruits

2 tablespoons coconut sugar

Slices of fruits for garnish (pineapple or your favorite fruit)

 

 

 

INSTRUCTIONS

 

1- Cut the passion fruit in half and remove the pulp 

2- Place the pulp in a high-speed blender or food processor until its smooth

3- Add the sugar and add more to taste

4- For a smoother consistency, strain using a mesh after blending

5- Place in a bowl or container

6- Refrigerate for at least one hour before serving

7- After 1 hour, grab your favorite drinking glass

8- Place the mixture into your glass, add cold sparkling water and stir

9- Garnish with your favorite fruit or mint leaves
